Caramelized Onion Pie
- 1 large white onion, diced
- 1-2T. olive oil
- 4 large eggs, beaten
- 1c. milk (I used unsweetened, unflavored almond)
- 3/4c. cornmeal
- 1/2t. salt
- 1/2t. baking powder
- 1/2t. pepper
- shredded cheddar cheese (optional)
Preheat the oven to 400. Using an oven-safe large skillet (cast iron would be best if you have it), saute the onion in olive oil over medium heat until brown and caramelized. Meanwhile, mix together the cornmeal, salt, baking powder, and pepper. Add the milk and eggs and stir together. When the onions are caramelized, add the cornmeal mixture and stir to combine. Remain on the heat for 30 seconds or so, until the edges just start to set. Remove from heat. Sprinkle the top with cheese. Place in the oven and bake for 25 minutes, or until golden brown with crisp edges.
We ate this for dinner but it would be really good as a breakfast dish. I think chopped broccoli could be a nice addition to it as well!
