Polenta is actually really easy to make, which is good because I couldn’t find it in the store to buy it for convenience. I think my polenta recipe ended up making more than the pizza recipe called for – in the future I would use about half the batch to make the crust, as our crust was pretty thick and didn’t get firm all the way through. We topped ours with caramelized onions, garlic, fresh basil, and balsamic vinegar. Delicious! Next time I’d try it with double the amount of onions and a thin spread of tomato sauce, too. I wouldn’t have thought to use polenta for a pizza crust (I actually forget about polenta most of the time in general) but it worked really well. Give it a try!
