vegan veggie pizza roll

The other day my cousin pinned a pizza roll recipe, which immediately reminded me of the awesome pizza roll my mom made when I was little – stuffed full of sauce and cheese and pepperoni.  I decided to take a new spin on it.  Verdict: amazingly delicious, quick to prepare, and will definitely be repeated!


Vegan Veggie Pizza Roll

  • this pizza dough
  • 1c. tomato sauce
  • 3t. minced garlic
  • 1/2 onion, diced
  • 1/2 yellow pepper, diced
  • 1 1/2c. kale, washed and torn into pieces
  • 1 small carrot, diced
  • 1t. basil
  • 1t. oregano
  • salt to taste
  • 2T. olive oil

Saute the onion, pepper, and carrot in olive oil over medium high heat for 7-10 minutes, or until veggies are all soft.  Add basil, oregano, and garlic.  Saute another 3 minutes.  Add tomato sauce and kale and stir to combine.  Salt to taste.  Cover and simmer on low heat for 3-5 minutes.  Remove from heat.

Mix together pizza dough.  Roll out dough into a 1/4″ thick rectangle on a piece of waxed paper (I rolled mine between 2 pieces of waxed paper, which worked well).  Spread sauce mixture evenly over the dough.  Roll dough up. Transfer to greased cookie sheet.  Bake at 400 for 30 minutes.  Slice and serve!

This is a great roll and easily customizable with different veggies.  And I didn’t even miss the cheese!
