banana blueberry baked oatmeal

Dave and I are huge fans of baked oatmeal as an awesome breakfast, leftovers for snacks, or even dessert.  This is a baked oatmeal my mom makes that is delicious!  It barely uses any sugar, which is great, too!

Banana Blueberry Baked Oatmeal

  • 2-3 bananas, sliced 1/2″ thick
  • 1 1/2c. blueberries
  • 2c. old fashioned oats
  • 1t. baking powder
  • 1 1/2t. cinnamon
  • scalt 1/2t. salt
  • 2c. milk
  • 1 egg
  • 1 1/2T. butter, melted
  • 2t. vanilla
  • 2 1/2T. maple syrup

Line the bottom of a greased 8″ baking dish with the sliced bananas.  Sprinkle 1c. of the blueberries over the bananas.  Mix together the oats, baking powder, cinnamon, and salt.  Spread over the fruit.  Whisk together the milk, egg, butter, vanilla, and syrup.  Pour slowly over the oats.  Gentle give the dish a few “thwacks” on the counter to make sure the milk moves through the oats.  Sprinkle the remaining 1/2c. of blueberries over the top.  Place in the top third of the oven.  Bake at 375 for 35-45 minutes, til the oats are set.
