Leo’s been trying more “grown up” food this week! Yesterday he had part of an oatmeal and flax pancake for breakfast. At lunch he tried some cream of vegetable soup. And at dinner he had a half of piece of wheat bread with hummus and some roasted parsnips. Apparently he is a carb lover like his mother, because the pancake and the bread had him kicking his feet and literally humming with happiness. He was really digging the parsnips, too (as was I). We’ve also tried Cheerios for the past week or so. Leo’s getting better at actually getting them in his mouth (although it’s still probably only 25% of the time). They’ve also been a great distraction tool for us while Dave and I eat dinner. Leo is happy to play with Cheerios and to try to get them in his mouth and we’re actually able to eat dinner without him fussing! We’ll see what other foods Leo tries this week. It’s been fun!
And here’s the recipe for the pancakes. They were really stinkin’ good!
- 1 1/2c. milk (soy or regular)
- 3/4c. whole wheat flour
- 2t. baking powder
- 1/2t. baking soda
- 1/2t. salt
- 1/4c. ground flaxseeds
- 3/4c. rolled oats
- 1t. cinnamon
- 1/2t. vanilla
- 1/4c. dried cranberries (optional)
Mix all together the ingredients and allow to sit for 5-10 minutes. Cook on a medium high greased skillet, flipping to brown.
Seriously, they were so delicious. And no oil or sugar!
