Rice Cooker Risotto

  • 1 1/2c. arborio rice
  • 4 1/2c. vegetable broth
  • 1T. italian seasonings
  • 5 cloves garlic, minced

Combine all ingredients in the rice cooker and set to cook (my rice cooker only has one setting). ย Serves 2-4.

We served our risotto with roasted broccoli and a little nutritional yeast:

Waaaaay easier to make risotto this way than to stand at the stove stirring! ย It would be delicious with some fresh parmesan shaved on top, too.

  1. I’ve never attempted risotto and I don’t own a rice cooker, but we had one of those packets of cheesy broccoli rice and grilled chicken last night. I also steamed up some cauliflower but it tasted funny so I dumped it.

    Steven steamed fresh green beans, made roasted cauliflower, and a yummy chickpea, red pepper bulgar salad last night!
