reader recipe poll: grilled rosemary and chickpea sandwiches

Grilled Rosemary and Chickpea Sandwiches

  • 2c. chickpeas
  • 3t. dried rosemary
  • 1t. salt
  • 4 cloves garlic, minced
  • 1T. olive oil
  • 1/4c. water
  • 1 tomato, sliced thin
  • spinach
  • bread for 2 sandwiches, your choice (we used pita bread but I think naan, foccacia, or any other delicious bread would be good)

Place the chickpeas, rosemary, salt, garlic, olive oil, and water in a food processor.  Pulse until pureed.  Spread a thick amount of the puree on the bread.  Top with spinach and tomato.  Press in a panini maker until bread is toasted and sandwich is warmed.

The chickpea spread is delicious.  Hummusy, ooey-gooey warm, and perfect on toasted bread.  A good comfort-food kind of sandwich, perfect to pair with a big bowl of soup or chili!
