Remember in the fall of 2010 when I became obsessed with Greek eggplant wraps? The obsession has returned. My mom sent us home with tomato jam and I roasted up an eggplant yesterday. I’ve been eating them without the feta or basil – just some italian seasonings – and oh.my.word. I think about eating these for breakfast. After I finish one I immediately need a second (and generally do).
I need more eggplant. And then more tomato jam. And repeat.
