super beany soup

It was a relaxing weekend over here, but somewhat productive, too.  I spent some time with my sister-in-laws on Saturday morning, then Saturday afternoon Leo took an awesome 2 hour nap and I blitzed the house – put away Christmas decorations, dusted, did laundry, cleaned up the kitchen.

Sunday morning I made a big (biiiiig) batch of beany soup.  We love to have soup in the fridge to eat for lunch during the week.  I don’t have an exact recipe because I made a huge stock-pot full – enough to feed an army.  But here’s the basic mix: black beans, white beans, chickpeas, lentils, split peas, barley, carrots, diced tomatoes, 2 heads roasted garlic, 2 onions, cumin, oregano, cayenne, and lots of salt.  We tore up fresh kale for the bottom of our bowls, then ladled the hot soup on top.  It wilts the kale, but still keeps it fresh.  I don’t like when kale (or spinach, for that matter) has sat in soup – it tends to get soggy and just funky tasting, at least to me.  We also topped ours with nutritional yeast.

Sunday afternoon Dave and I drove down to Fort Wayne.  Dave hit up a hockey game with his dad and my uncle.

I got to hang out with my aunt and Leo.  Such a fun day and a great weekend.  I kicked this morning off with a 4 mile hill run on the treadmill.  Can’t believe it’s Monday already!
