These mocha shortbread cookies are pretty good! They’re not soft and chewy, which, in my opinion, makes a cookie awesome. But they’re shortbread, so they’re not supposed to be soft and chewy. For shortbread, they’re right on – with a distinctly chocolate-coffee taste! If you like shortbread, I think you’ll really like them. If you’re looking for a soft cookie, these aren’t for you.
I used this recipe. My only modification was using 3T. of instant coffee granules instead of 2T. espresso powder. Like I said, they still have a lot of coffee flavor, so I don’t think the substitution went awry.
