Squash Kale Wraps
- 1 summer squash, diced
- 1 pepper, sliced (I used yellow)
- 1 onion, diced
- 1T. olive oil
- 1t. cumin
- 1/2t. salt
- 2 large kale leaves, torn into chunks
Combine all ingredients except kale and tortillas. Saute over low heat for 20-30 minutes, until veggies are soft and carmelized. Add in kale and cover for 3-5 minutes, until the kale has wilted slightly. Serve in tortillas. Serves 2.
These are simple but so so good. The veggies are just slightly sweet from being cooked on low and the cumin and salt give them a delicious edge. The kale gives some leafy crunchy texture to it all! I definitely recommend them!
