reader recipe poll: tri-yellow salad

Tri-Yellow Salad

  • 2T. olive oil
  • 1 onion, diced
  • 1 yellow squash, diced
  • 2lbs. frozen corn, rinsed under hot water
  • 1 head of garlic, roasted (see here for a good tutorial on roasting garlic)
  • 1T. italian seasonings
  • yellow tomatoes
  • salt to taste
  • nutritional yeast (optional)

Saute the onion and olive oil together over medium low heat for about 5 minutes.  Add the yellow squash.  Continue to saute over medium low heat until onions are soft and brown (carmelized) and squash is tender.  Mash the roasted garlic bulbs with a fork.  Add the roasted garlic, corn, and italian seasonings to the onion/squash.  Mix well.  Cover and let simmer together 10-15 minutes, stirring occasionally.  Add the tomatoes.  Salt to taste.  Top with nutritional yeast.

We took this salad with us when we went to dinner with friends.  We all really liked the salad – the roasted garlic is a really delicious element to the dish.  Top with nutritional yeast and you have a QUAD yellow salad!
