Dave and I started off our morning with cinnamon roll oatmeal, inspired by my cousin Wendy, who pinned this recipe on Pinterest. We made our own modifications in order to have steel cut oats. The result was warm, cinnamon-y, and deliciously sweet!
Cinnamon Roll Oatmeal
- 1c. steel cut oats
- 4c. water
- 3t. cinnamon
- 1t. vanilla
- 2T. ground flaxseed (optional)
Combine oats and water in a large saucepan. Bring to boil. Reduce heat and simmer, uncovered, until water is absorbed and oats are thick, about 15-20 minutes. Add in the cinnamon, vanilla, and flax and stir well.
Frosting (adapted from here):
- cream cheese
- powdered sugar
Whisk together cream cheese and powdered sugar. Add milk in small amounts until desired creaminess. Adjust thickness by adding powdered sugar. (I started with about 4T. cream cheese and 2T. powdered sugar and 1T. milk, then adjusted with powdered sugar as needed.)
Spoon oatmeal into bowls and top with frosting. Serves 2-4, depending on your appetite!
