veggie fajitas

Here’s an easy solution to dinner on a busy night or when groceries are low or when you’re just feeling kind of tired and lazy!

Veggie Fajitas

  • 2-3 veggie burgers
  • 2 peppers of your choice (we did orange and yellow), sliced in long, thin strips
  • 1 onion, cut in large slices
  • 2T. olive oil
  • salt to taste
  • 4 tortillas
Heat the veggie burgers on the stovetop according to package instructions.  Meanwhile, saute the peppers and onions in the olive oil over medium heat until onions and peppers are browned and carmelized.  Salt to taste.  Slice the cooked the burgers in long strips.  Place a few slices of burger and some peppers and onions in a tortilla.  Wrap and enjoy!  Makes 4 fajitas.

  1. I never thought to use veggie burgers to make fajitas – I have some black bean burgers in the freezer that would be perfect. Add some pico and guac and yum!
