reader recipe poll: banana coffee muffins

Banana Coffee Muffins

  • 3 ripe bananas, mashed
  • 1/4c. butter
  • 1/3c. sugar
  • 1t. vanilla
  • 1 egg, beaten
  • 1/4c. strong brewed coffee
  • 1t. baking soda
  • pinch of salt
  • 1 1/4c. flour (I used whole wheat)
  • 1/2c. ground flaxseed
  • 1/2c. chocolate chips (optional)
Mix together the mashed bananas and butter.  Add in the sugar, vanilla, egg, and coffee and mix well.  Add in the baking soda and salt.  Add the flour and flaxseed and mix until just incorporated.  Fold in chocolate chips.  Pour into a greased muffin tin.  Bake at 350 for 20 minutes, or until toothpick comes out clean.  Makes 1 dozen muffins.

These are delicious banana muffins, but the coffee taste is not very prominent.  Maybe espresso would be a better choice?  In any case, they’re very moist and we’ll definitely have them again!
