No reader recipe poll this week, as it’s a busy week for us and I’m behind on making banana coffee muffins (recipe will be this week!). In the meantime, check out this delicious meal we had last week. It’s comfort food at its finest and so good!
Brussel Sprouts Hash
- 1 onion, chopped
- 1 bunch brussel sprouts, thinly sliced (about 5c.)
- 8 new potatoes, diced small
- 4 cloves garlic, minced
- 2c. white beans, drained and rinsed
- 1c. vegetable broth
- 1t. salt
- 2t. italian seasonings
- 3T. olive oil
Combine all ingredients in a large skillet and mix well. Cover. Cook over medium high heat, stirring occasionally, until potatoes are tender and brussels and onions are starting to brown (about 20 minutes). Makes 2 large servings or 4 side servings.
