reader recipe poll: sesame cashew cauliflower quesadillas

Sesame Cashew Cauliflower Quesadillas

  • 2T. olive oil
  • 2T. sesame seeds
  • 1 head of cauliflower florets, chopped small and thin
  • 1 red bell pepper, sliced thinly
  • 1 onion, sliced thinly
  • 1/4c. roasted cashews, chopped small
  • 2-4T. soy sauce
  • 4 tortillas
  • 1c. shredded cheese

In a large saucepan, saute the sesame seeds, cauliflower, pepper, and onion in olive oil over medium heat for 3-4 minutes.  Add the cashews and soy sauce.  Cover and let cook for about 5-7 minutes, until cauliflower is tender.  Sprinkle some shredded cheese on half of one side of a tortilla.  Spoon some of the cauliflower mixture onto the cheese.  Fold the tortilla in half and press in a hot panini maker, George Foreman grill, or heat through on a skillet on the stove.  Serves 4.

I’ll be honest – I fully expected this recipe to be gross.  It sounded like an odd mixture of things and I was pretty sure that Dave and I would be eating something else.  Turns out these were pretty good.  They weren’t blow-me-away amazing, but they were different and flavorful!

  1. I recently made greek quesadillas that were fabulous. Couldn’t believe how good they were, to be honest, because they were so easy. Flour tortillas stuffed with tons of wilted spinach, garlic, feta cheese, nutmeg, can’t remember what else. I think the recipe was from food network. Yummy!

  2. Seeing as I’m not a huge fan of cheese, quesadillas are not a food I eat very often, but I’d probably go with your basic chicken and some green sauce.
