cracked wheat pilaf

Cracked Wheat Pilaf (adapted from here)

  • 2T. olive oil
  • 1 onion, diced
  • 1 green pepper, diced
  • 1/4t. salt
  • 1/3c. whole wheat spaghetti noodles, broken into small pieces
  • 2c. vegetable broth
  • 1c. cracked wheat
  • 2c. tomatoes, diced

Saute the onion and green pepper in olive oil until onion is translucent.  Add the salt and spaghetti noodles.  Stir frequently for 5 minutes, allowing the spaghetti noodles to brown.  Add the remaining ingredients.  Cover and bring to a boil.  Simmer for 10 minutes, or until mixture is moist but not wet.  Serves 2.

I wasn’t sure about this recipe, since it seems pretty basic, but it was surprisingly delicious in its simplicity.  We’ll definitely be having this again!
