reader recipe poll: deep dish cookie pie

(We had a friend over and we dished up the cookie pie before we took pictures.  So imagine this whole.)

I used the recipe here pretty much exactly – I used white beans and added a 1/4c. water to the mixture so it would blend better.  I loved this – it’s not crazy sweet but still definitely tastes like a cookie.  I will for sure be making this again – maybe in actual cookie form?  And in cookie pie!

What’s your favorite kind of cookie?  I love chocolate chip, peanut butter chocolate chip, and my mom’s awesome M&M bars (and a whole bunch more…).

  2. I make this cookie pie all the time. I eat it as a protein bar, I bring it as dessert to gatherings, and it’s a good gf option if you use gf oats. I make it with garbanzo beans, mess with the sweeteners just a bit, and use dk. chocolate chunks. In an effort to cut back the sugar I usually use 5 packets of Stevia, 1/3 C. Agave, and 1/3-1/2 C. of brown sugar. It turns out really lovely and the refined sugar is much reduced.

  3. This looks so good! I feel like it would be gone in less than a day in my house… which is only me & my husband, but I think once we started eating it we wouldn’t be able to stop!

  4. That looks really good! I’ve never made a cookie pie with beans before. Interesting.

    My favorite cookie is White Chocolate Macadamia, but I’ve never really met a cookie I didn’t like. Except Fig Neutons. Those are gross.
