reader recipe poll: vietnam fried rice

Vietnam Fried Rice (adapted from More-with-Less)

  • 2T. olive oil
  • 3 garlic cloves, minced
  • 1 onion, diced
  • 1t. salt
  • 1t. sugar
  • 2T. soy sauce
  • 1 1/2c. cooked brown rice
  • 2c. frozen broccoli
  • 3 eggs, whisked

In a large skillet, saute the oil, garlic, onion, salt, sugar, and soy sauce until onion is translucent (about 5 minutes).  Add the rice and mix well.  Let cook for 5 minutes.  Add the frozen broccoli.  Cover the skillet for 8-10 minutes, until broccoli is crisp-tender.  Add the eggs and mix well, stirring until eggs are cooked through.  Serves 2.

This is a really easy recipe.  It’s not anything terribly special – just a basic fried rice – but it’s really good!  And it didn’t make a ton, so we were able to eat it all.  🙂
