I did it! I used up the super nasty bananas on the counter and made banana bread – for the very first time in my life. I shut off my brain as I peeled all the mushy, gross bananas and didn’t let myself think about what I was touching. And I got through it – no gagging! I’m growing up!
First, two banana recipes that were shared via the comments. Both of these looked really good, but in the end I was hankering for a loaf of bread, not muffins or cake.
And here’s what I came up with!
Lots o’ Bananas Banana Bread
- 3/4c. sugar
- 2 large eggs
- 5 very ripe bananas
- 1/2c. plain yogurt
- 1t. vanilla
- 2t. cinnamon
- 2c. whole wheat flour
- 3/4t. baking soda
- 1/4t. salt
In a large mixing bowl, cream together the sugar and eggs. Add in the bananas and mix until bananas are mashed. Add in the yogurt, vanilla, and cinnamon. Beat until blended. Add in the flour, soda, and salt. Combine until mixture is just moist. Pour into a greased bread pan. Bake at 350 for 1 hour 10 minutes, or until toothpick comes out clean. Allow to cool for at least 10 minutes in the pan, then remove and allow to cool on a rack.
This banana bread is good. Super banana-y, but also really moist and delicious. And pretty healthy, too, since it doesn’t have oil or too much sugar! I have a feeling this is going to go fast!
