Rhubarb Baked Oatmeal

  • 4c. old fashioned oats
  • 1T. cinnamon
  • 2t. baking powder
  • 1t. salt
  • 1/2c. brown sugar (loosely packed)
  • 2 eggs
  • 1/2c. vanilla yogurt
  • 1/2c. water
  • 1/2c. unsweetened applesauce
  • 2c. rhubarb, chopped

Combine the dry ingredients (except the rhubarb).  Combine the wet ingredients.  Add the wet mixture to the dry.  Mix until just combined.  Fold in the rhubarb.  Spread in a greased 9×13 casserole dish.  Bake at 350 for 35 minutes.

It’s no secret that we loooove baked oatmeal in this house.  It’s so simple and filling for breakfast and it’s great for a snack or just something to satisfy your sweet tooth.  We love blueberry baked oatmeal, chocolate chip baked oatmeal, cranberry baked oatmeal, raspberry baked oatmeal, apricot baked oatmeal… you get the point.  Go ahead and add tangy rhubarb baked oatmeal to the list!
