Honey Peanut Butter Granola Bars
- 2c. oats
- 1/2c. sunflower seeds
- 1/2c. wheat germ
- 1/2c. roasted unsalted peanuts
- 1/2c. honey
- 1/2c. smooth peanut butter
- 2t. vanilla
- 1/2t. salt
Combine oats, seeds, wheat germ, and peanuts. Mix well. In a small saucepan, combine peanut butter, honey, salt, and vanilla over low heat. Stir until well combined and heated through. Mixture should soften and become very loose and syrup-y. Pour peanut butter mixture over dry ingredients. Stir well, making sure the peanut butter honey is well incorporated throughout. Pour mixture into a greased 8×8 square pan. Bake at 300 for 20 minutes. Let cool completely before cutting. Makes 12 bars.
I want to keep playing with combinations in these bars – sesame seeds, ground flaxseed, etc., but we really liked them. They’re dense and chewy and not overly sweet. Great for pre-run fuel or an afternoon snack. I think I’ll be making a lot of these, especially as I looove snacks!
