stir fry and mocha punch

Last night we had one of our super-fast super-delicious dinners: stir fry!

One onion, sauteed in olive oil, then added in broccoli, peas, teriyaki sauce, and soy sauce.  Once the veggies got soft I cracked in 4 eggs and mixed it all around.  Let it go til the eggs were cooked through, added sesame seeds, and served over soba noodles.  Super fast.  Super delicious.  Super good for you!

Something not so good for you but super delicious: mocha punch.  My friend, Rachel, made this for my baby shower this past weekend.  It’s fantastic.  Buckle up.

Rachel’s Mocha Punch 

  • 1 1/2 qts water
  • 1/2 c. chocolate drink mix (nesquik, ovaltine, etc)
  • 1/2 c. sugar
  • 1/4 c. instant coffee granules
  • 1/2 gal. vanilla ice cream
  • 1/2 gal. chocolate ice cream
  • garnish: whip cream

Bring water to a boil; remove from heat.  Add drink mix, sugar, and coffee granules; stir until dissolved.  Pour into a container; cover.  Refrigerate for at least 4 hours.  Remove from refrigerator at least 30 minutes before serving; shake or stir and pour into a punch bowl.  Spoon in ice cream; stir until partially melted.  Garnish with whipped cream.  (Rachel recommends doubling the recipe if it’s for a group.)

Note: I don’t think this has a strong coffee taste, so even if you don’t like coffee I think you might like this.

I’m pretty sure since it’s hot out and this has coffee you could call this “iced coffee” and drink it every morning.  Right?  No?

  2. This is seriously the BEST party punch ever!! Rachel had it at a gathering here in Bluffton…..and I think I dreamed of its deliciousness for about a week!

  3. Love iced coffee! I think my iced coffee season started back in March. I am always eager to switch over to the iced!

    I will need to try this as well. I wonder if there is any way I can use my cocoa powder instead… hmm.

    I think I would need 1/4 Cup of instant just for my serving! LOL.

  4. LOVE iced coffee – I’m all out of these leftovers and now I want to risk a rain-walk to go get some at the Bean! How are your leftovers?! All gone yet?!
