reader recipe poll: super easy broccoli quiche

I know, I know.  This week’s reader recipe poll was asparagus.  Yep, it sure was.  And Kroger didn’t have a stalk of asparagus in site yesterday.  It surprised me and saddened me, but then I hitched up my shorts (in typical Indiana fashion we’ve gone from winter to rainy cold season straight into summer.  Seriously, it was 86 degrees yesterday.) and made do.  The result is a quiche that’s delicious, easily adaptable, and super easy.  Win win win!

Super Easy Broccoli Quiche

  • 1 bag frozen chopped broccoli
  • 7 eggs
  • 1/4 heaping t. salt
  • 1/2t. italian seasonings
  • 1/2t. garlic powder
  • 1/2t. onion powder
  • 1 frozen pie shell
  • 1/2c. sharp cheddar cheese, shredded
Empty the bag of broccoli in a strainer.  Run under hot water for a few minutes.  Set aside to drain.  Whisk together the eggs and seasonings.  Add in the drained broccoli.  Mix well.  Pour into pie shell.  Top with cheese.  Bake at 375 for 45 minutes or until top is brown, eggs are set, and an inserted knife comes out clean.

Suggested adaptations: chopped asparagus spears, real onion and garlic (I was in a bit of a rush), different seasonings, homemade pie shell.

  1. I love quiche! I put whatever leftover veggie that’s in the fridge. Sometimes spinach, sometimes brocc, sometimes onion. Yours looks delicious 🙂
