reader recipe poll: blueberry baked oatmeal

Baked Blueberry Oatmeal

  • 2c. old fashioned oats
  • 1 ripe banana, mashed
  • 1T. vegetable oil
  • 1 1/2c. skim milk
  • 2t. cinnamon
  • 1/2t. ginger
  • 1t. baking powder
  • 1/4t. salt
  • 2T. sugar
  • 1t. vanilla
  • 3c. blueberries

Combine all the ingredients except the blueberries.  Spread the blueberries on the bottom of a greased 8×8″ pan.  Pour the oatmeal mixture on top.  Bake at 350 for 35 minutes, or until oatmeal is firm.

This was awesome.  It wasn’t cakey, like other baked oatmeals (which I also love), but almost like a blueberry cobbler.  YUM.  Complete deliciousness, really fast, definitely a keeper-make-again-recipe.

Please also notice the inclusion of a mashed banana.  This is big for me, people.  I normally can’t make banana bread or other mashed-banana baked goods because I can’t handle over-ripe bananas (the smell, the look) or mashing them.  But I peeled the banana and threw it in the Kitchenaid mixer, letting it get mashed there rather than by hand.  Then I threw in the rest of the ingredients.  I need to remember this in the future – maybe I can actually MAKE banana bread (I love banana bread)!

Banana bread: love it or hate it?  I love it, but NOT with nuts!  What a bad surprise!

  1. Love banana bread, and most sweet breads in general (zucchini, pumpkin, etc.). Hate nuts, well am allergic to nuts, so also view them as bad surprise. This oatmeal looks unbelievable. I’m all over it! Thanks!
