reader recipe poll: rice noodle stir fry

Okay, confession.  The real reader recipe poll winner was soba noodle stir fry.  But I couldn’t find any soba noodles!  So I grabbed rice noodles in a pinch.  Feel free to substitute with soba noodles – I’m still planning on hunting them down so we can try them!

Rice Noodle Stir Fry

  • 120z. bag frozen onions and peppers
  • 12oz. bag frozen vegetable mix (I used “fiesta style”)
  • 2T. olive oil
  • 1/2c. water
  • 8oz. box of rice noodles
  • 2T. peanut butter
  • 2T. soy sauce
  • 1 1/2T. vinegar
  • 1T. water
  • 5 cloves garlic, minced
In a large skillet, combine the frozen veggies, olive oil, and 1/2c. water over medium high heat.  Cover, stirring occasionally, for about 8 minutes, or until veggies are tender but still crisp.  Meanwhile, soak the rice noodles in warm water for 8-10 minutes.  Drain.  Set aside.  Combine the remaining ingredients.  Whisk together until well combined.  Add the rice noodles and sauce mixture to the vegetables.  Toss well to combine.  Serve with soy sauce and roasted peanuts.

This recipe is awesome because 1) it’s delicious 2) it’s really easy and fast and 3) you can change it up every time.  Different veggies – fresh or frozen – different noodles or rice, whatever.  Even Dave loved this – and he is not normally a huge fan of Chinese food!  I used frozen veggies because it was cheap and easy, but also threw in some leftover corn we had in the fridge.

This is a great “clean out the veggie drawer” meal!  Dave’s already asking when we can have it again!

  1. we had tandem dinners. mine was brown rice with kale, mushrooms and spicy peanut sauce. if it weren’t for that pesky state of ohio between us, we could have eaten together. 🙂

  2. Rachael Ray uses whole wheat spaghetti to sub for soba noodles, ha! But regular soba noodles are definitely yummy! The stir fry you made looks delish, Kim!
