Zucchini Cookie Bars (adapted from here)
- 3/4c. brown sugar
- 3T. sugar
- 1/4c. butter
- 1/2c. unsweetened applesauce
- 1 egg
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4t. ginger
- 1t. cinnamon (heaping)
- 2 1/2c. whole wheat flour
- 1c. oatmeal
- 2c. zucchini, grated
- 1c. mini semisweet chocolate chips
Cream together sugar, butter, applesauce and egg. Add dry ingredients and mix. Add zucchini and chocolate chips. Spread on greased cookie sheet. Bake at 375 for 20 minutes, or until toothpick comes out clean. Makes 3 dozen.
These are so stinkin good. We had friends over for dinner, so I taste tested one when they came out of the oven, just to make sure they were edible. They’re awesome! Sweet and soft, with that subtle zucchini bread taste underneath. YUM. We’ll definitely be having these again!
Note: I chopped up my zucchini in the mini food processor – it went really fast that way and clean up was easy!
We had a pretty cute dinner guest, too, whole also loved the cookies. Two year old, Toby!
