reader recipe poll: peanut butter scones

Peanut Butter Scones (adapted from here)

  • 1c. oatmeal
  • 1 3/4c. whole wheat flour
  • 2T. sugar
  • 2 t. baking powder
  • 1/2t. baking soda
  • 1/4t. salt
  • 6T. cold butter, cut up
  • 2/3c. milk
  • 1 egg
  • 1/2c. peanut butter, creamy

Mix the oats, flour, sugar, powder, soda, and salt.  Add the butter and mix.  The mixture should be course crumbs.  Add the milk, egg, and peanut butter and combine well.  Drop mixture in spoonfuls on greased cookie sheet.  Bake at 400 for 16 minutes, or until toothpick comes out clean and bottoms are golden brown.  Makes 8 scones.

These are not very sweet, which really allows the peanut butter taste to come through.  They’re very soft fluffy and really very delicious.  In the future I’d like to play around with subbing applesauce for the butter (at least partly), but these are very good as is!
