reader recipe poll: gourmet grilled cheese

“Gourmet” here might be a little subjective, but it’s fancier grilled cheese than your standard sandwich.  We wanted to get some nicer cheese for these sandwiches, but when push came to shove and the budget was on the line, ponying up $10 for cheese just wasn’t going to happen.  Here’s our frugal take on gourmet grilled cheese!

Kim’s Gourmet Grilled Cheese

  • 2 slices whole wheat bread
  • butter
  • 1 1/2 slices colby longhorn cheese
  • 2 slices fresh mozzarella
  • dijon mustard
  • onion powder
  • garlic powder
  • italian seasonings

Butter the outside-facing side of each piece of bread.  In the inside, spread mustard, arrange cheese evenly, and sprinkle with seasonings.  Grill in panini maker or on a skillet on medium until bread is toasted and cheese is melted.

Dave’s Gourmet Grilled Cheese

  • dill pickles

Butter the outside-facing side of each piece of bread.  In the inside, spread mustard, arrange cheese and pickles evenly, and sprinkle with seasonings.  Grill in panini maker or on a skillet on medium until bread is toasted and cheese is melted.

Since the reader recipe poll said “which sandwhich should Dave make”, he wanted to prove that he did indeed make these.  Look at that focus as he situates the sandwich in the George Foreman!

And the final products:

Dave cut his diagonal to be extra fancy.  We both loved our sandwiches – the dijon gave a nice zing and the mozzarella made them vaguely mozzarella-stick reminiscent (a decidedly very good thing!).  You could try yours with different cheese (smoked cheddar would be awesome), pesto, tomatoes, carmelized onions, whatever!  I think Dave and I will definitely need to have another go at gourmet grilled cheese!

  1. That looks so good. I have always loved grilled cheese. Haven’t had any in a while since we took most pasteurized dairy out of our diet. We do eat goat cheese, raw cheese, and alternative cheeses. I don’t know why I haven’t ever tried to make a grilled cheese with any of them. I need to get on it. I love how focused your hubby is.

  2. Those look delicious! Deli meat is always good too (although then you’re getting more into panini territory than grilled cheese). We like doing breakfast paninis on our Foreman grill – eggs over hard, swiss cheese, bacon or deli turkey.

  3. We like to switch the bread up, too, and use french or italian bread. Then we do a lot with chedder, munster, swiss, and like basil and tomatoes like others have mentioned. I haven’t tried this but have seen people talk about putting apples, like granny smith apples, on grilled cheese. That’s tempting. This is making me want to eat grilled cheese so bad! 🙂

  4. The diagonal cut was a definite improvement on appearance than straight cut. I appreciate the extra effort on Dave’s part. But the pickles and BBQ sauce are kind of creeping me out. If it were mine, I would have put avocados and tomatoes in it along with some spinach.
