spinach goat cheese pasta bake

I’m on my way home from Oklahoma City (with hopefully more luck than coming here), so I thought I’d share a meal we ate this past weekend!

Spinach Goat Cheese Pasta Bake

  • 3-4c. fresh spinach, loosely packed
  • 1/3c. goat cheese
  • 1/2t. salt
  • 3 cloves garlic, minced
  • 1t. basil
  • 3T. olive oil
  • 2c. dried pasta
  • 1/3c. bread crumbs
  • 1/2c. shredded cheese

Cook pasta until tender.  Drain and set aside.  Put first six ingredients in a food processor.  Blend until well-combined.  Pour sauce over the pasta and toss to mix well.  Spread the pasta in a greased casserole dish.  Top with breadcrumbs and shredded cheese.  Place under the broiler until cheese is melted and browned.  Serves 4-6.

We topped ours with leftover fresh mozzarella.  It was delicious and came together really fast, in about 15 minutes.  A great way to use up spinach that’s starting to wilt, too (ours was!).

  1. YUM! I am going to make this this week. Maybe even tonight if I find I have some pasta in the cabinet when I get home. I will probably use brown rice pasta. I love anything with goat cheese and spinach and I have both in the fridge right now.
