reader recipe poll: potato broccoli casserole

This is not my week for computers.  Earlier this week I had a computer virus and today our internet completely fritzed out.  Argh!  A little late, but here it is nonetheless!

Potato Broccoli Casserole

  • 4c. chopped red potatoes
  • 3 1/2c. finely chopped frozen broccoli
  • 2T. olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1/2c. plain yogurt
  • 1/3c. sour cream
  • 1T. Italian seasonings
  • 1/2t. salt
  • Shredded cheese (optional)

Place potatoes in a large saucepan and cover with water.  Bring to a boil, then simmer.  When potatoes are almost tender, pour in the broccoli.  Simmer until potatoes and broccoli are soft.  Remove from heat and drain.  Place in large bowl.

Saute onion, garlic, and olive oil together over medium heat, until onion is soft.

Mash potatoes and broccoli with either a potato masher or using the KitchenAid mixer.  Once potatoes are mashed, add in onion, garlic, sour cream, yogurt, seasonings, and salt.  Mix well.  Spread mixture in a greased 9×13 casserole dish.  Top with cheese if desired.

Bake at 375 for 35 minutes.

I snuck a couple cubes of ham into Dave’s side of this dish as well.  We both really loved this – like mashed potatoes but fluffier and more flavorful.  I made this as a main dish, but it probably would work better as a side.  Definitely a keeper recipe for us and one I’ll make again!
