Okay, I know the reader recipe poll voted for chik-fil-a “chicken” burgers. And that’s what I set out to make… but in the end, they tasted more like pesto bean burgers. Delicious pesto bean burgers, but not “chicken”. Sorry, guys!
Pesto Bean Burgers (inspired by Laura)
- 1c. garbanzo beans
- 2c. kidney beans
- 1 egg
- 2/3c. bread crumbs
- 3T. pesto
- 1/2t. salt
Combine all ingredients in a food processor til beans are mashed but mixture is chunky. [If your food processor is too small (like mine). Add remaining ingredients and mash together by hand.] Use your hands to create 8 patties. In a greased skillet fry patties over medium heat until brown (about 5 minutes on each side). Let patties rest about 5 minutes before serving to firm them up further. Serve on buns with toppings.
We had ours with avocado, provolone cheese, tomatoes, and ketchup. They were so so good! I was especially excited because this is the very first time I’ve made bean burgers that have actually held together! I think the key to this was cooking over medium heat – I get impatient sometimes and try to cook it too high, which leaves it cold on the inside and still gloopy/floppy.
