minestrone soup

Last night I wasn’t sure what to make for dinner.  I was feeling kind of lazy, to be honest.  When in doubt, soup always comes through.

Easy Minestrone Soup

  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2T. olive oil
  • 4c. vegetable broth
  • 2c. water
  • 1 can diced tomatoes
  • 1 can cannelinni beans, drained
  • 1 can kidney beans, drained
  • 2c. broccoli, frozen
  • 2c. green beans, frozen
  • 1 1/2c. elbow macaroni
  • 3/4t. salt
  • 1T. italian seasonings
  • 1/2t. crushed red pepper
  • 3c. kale, torn into small pieces

Saute onion and garlic in olive oil until onion is soft.  Add all remaining ingredients except for the kale.  Bring to a boil.  Reduce heat and simmer 30-45 minutes.  Ten minutes before serving, add in kale.  Allow steam to wilt the kale.  Stir together.  Serve with parmesan cheese.

Simple, easy, and hearty.  Deeeelicious!
