Green Soup (inspired by Faith)
- 1 red pepper, chopped
- 1 onion, chopped
- 3-4 cloves garlic, minced (or use garlic powder if you’re like me and ran out of garlic…)
- 1T. olive oil
- 5c. chopped broccoli (frozen or fresh)
- 4c. vegetable broth
- 4-5c. chopped kale (or other greens – spinach would work, too)
- 2c. shredded cheese (I used mozzarella in the soup and cheddar for on top)
- 1/2c. milk
Saute carrot, onion, and garlic in olive oil til carrots are soft and onions are transparent. Add in vegetable broth and broccoli. Bring to a boil and simmer for 8-10 minutes, or until broccoli is tender. Add in kale and allow kale to wilt in the steam. Remove soup from heat. Use an immersion blender (or transfer in batches to a blender) and puree until soup is smooth. Return soup to heat. Add in 1c. of cheese. Heat until melted through. Add in milk. Heat through. Serve topped with cheese.
It was perfect and warm and so delicious. Especially given the snowy super-coldness outside. Love that it’s packed with lots of good vitamins to keep away winter colds.
