reader recipe poll: layered veggie crockpot casserole

Layered Veggie Crockpot Casserole

Layer diced veggies in a greased crockpot.  You can choose any combination of veggies that you want.  Here’s what our casserole had:

  • 4 yukon gold potatoes, diced
  • 2 onions, diced
  • 1 large zucchini, diced
  • 3 carrots, diced
  • 1 yellow pepper, diced
  • 2c. cooked lentils
  • chopped frozen broccoli
  • frozen corn
  • garlic salt sprinkled every few layers


  • 1 28oz. can tomato sauce
  • 1T. italian seasonings
  • 1/2 t. salt
  • 1/8t. cayenne
  • 1t. garlic powder
  • 1/2t. cinnamon

Mix sauce together.  Pour evenly over layered veggies.  Set crockpot for 6 hours on high or 12 hours on low.

My crockpot always cooks crazy fast, so I did 3 hours on high, 2 on low, and 1 on keep warm.

YUM.  Hearty, warm, and thick, this is perfect comfort food.  Dave even liked it without any cheese (that means it must be good!)!  And this is really easy to prepare, if you don’t mind spending about 15-20 minutes chopping veggies.
