reader recipe poll: spaghetti and meatless meatballs

Meatless Meatballs
  • 1/2c. cooked lentils
  • 1c. cooked brown rice
  • 1/4c. oats
  • 1/4c. + 2 T. ground flaxseed
  • 1T. soy sauce
  • 2 T. olive oil
  • 2t. lemon juice
  • 1/4c. whole wheat flour
  • 1/2t. salt
  • 2 cloves garlic, minced

Combine all the ingredients in a food processor and pulse to blend.  It’s okay if there are still chunks of rice or lentils, just make sure it is well blended.  Depending on the size of your food processor you might need to dump the mixture into a bowl and stir it to fully incorporate all ingredients.

Scoop mixture (about 1T. at a time) and roll in hands.  Place on a greased cookie sheet and bake at 300 for 30 minutes.  Allow meatballs to sit about 5-10 minutes before serving, so they firm up.  Makes about 25.

These were delicious – the texture was very “meat”-like and the taste was awesome.  Even better – they pack a lot of protein!  We will definitely have these again.  Total prep time was about 5 minutes – very easy.  Serve them up with pasta or a swedish meatball sauce… anything would work!

  1. I was looking for dinner recipes with things we already have in the house (because I hate the grocery store on week nights) and I might have to try these tonight! They look great! I hope my meat loving husband can handle them haha
