Dave has a deep, professed love for my mom’s peanut butter granola. But over many months he kind of ate himself into a coma over it, and was feeling ready for a change. What Dave wants, Dave gets, at least this time:
Chunky Crunchy Granola (based on the recipe from Simply In Season)
- 3c. rolled oats
- 1c. whole wheat flour
- 1/2c. shredded coconut
- 3/4c. roasted unsalted peanuts
- 1/4c. brown sugar
- 1 1/2t. cinnamon
- 1/2t. salt
- 1/4t. ginger
- 1/4c. oil
- 1/4c. honey
- 1/4c. milk
Mix oats, flour, coconut, peanuts, cinnamon, salt, and ginger in a large bowl. Make a well in the center of the mix. Add in oil, honey, and milk. Stir well until all pieces are coated well. Spread over greased cookie sheet. Bake at 300 for 25 minutes (longer if you like crispy granola – Dave likes chewy).
Dave loves granola with his cereal or with yogurt or fruit. I’m not a huge granola person… except when it’s hot from the oven. Then I love to munch!
