chocolate pumpkin cake muffins

Like most people, I’ve been on the lookout for pumpkin.  In general, I don’t go crazy over pumpkin.  I don’t really want pumpkin flavored oatmeal and I’d take a chocolate chip cookie over a pumpkin one any day.  Pumpkin belongs in pie and those delicious pumpkin rolls.  But other than that, I can take or leave pumpkin.

These are why I’ve been searching for pumpkin, and why I bought seven cans of it last week.  Two ingredients, one awesome result.

Chocolate Pumpkin Cake Muffins

  • 1 box devil’s food cake mix
  • 1 15oz. can pumpkin

Mix well, until cake mix is completely absorbed.  Spoon into cupcake liners.  Sprinkle with chocolate chips.  Bake at 350 for 20 minutes.  Makes 12.

I think this recipe is originally a Weight Watcher’s one?  My friend Richele gave it to me a few years back.

The muffins come out incredibly soft and delicious.  And I think they’re each about 180 calories?  Not bad for cake!

What’s your favorite use of pumpkin? I also like pumpkin for superfood muffins!

Note: If you type “pumpkin” too many times it starts to look completely wrong.  I actually googled it just to doublecheck I was spelling it right!

  1. i love pumpkin. i use it to bake a lot of things, so maybe that’s why? i’m still working on getting it perfected in the oats, though. 🙂 i made a homemade pumpkin latte this morning, which was fantastic, though!
