Now that Kate is here and life is busier, I’ve gone back to meal planning each week. Generally I do it in the middle of the night on Friday or Saturday, while I’m feeding Kate. I pick out some recipes, assign them to days via Google Calendar, and then update our grocery list (which is shared between Dave and I on Google Docs). Then on Saturday or Sunday we go to the store and pick up what we need. So far it’s helped a lot. Instead of scrambling for dinner ideas (which stresses me out), I already know what I’m making and I can prep meals earlier in the day. We can knock out our grocery list in one trip rather than having to make an “oh no I need that!” run in the middle of the week. AND it’s helping me actually make some of the meals I’ve pinned on Pinterest! Guess what? I’m even using some freezer meals. Hold on to your hats, folks.
Here’s what we had this week in meals:
- Monday - mexican quinoa with guac: SUPER good and really easy. We added this to our list of favorite recipes.
- Tuesday - chickpea, vegetable, and pesto soup with pan bread: the soup was hearty but didn’t knock us out. The pan bread was delicious and fast (I’d add a little salt)!
- Wednesday - lentil sloppy joes: we ate ours over cornbread, then had scrambled eggs over cornbread the next morning for breakfast. Win!
- Thursday – leftovers
- Friday - mexican lasagna
Saturday is either leftovers or something I pull together from odds and ends in the cupboards and fridge. Sunday we tend to keep pretty chill. Sunday lunch is often leftovers and Sunday evening is popcorn and fruit or oatmeal and cereal.
I doubt I’ll have it together enough to post our meals every week (who knows – maybe I will!) but I’ll try to post them every once in awhile.
