Lawnmower Salad (adapted from here)
- 1pkg. soba noodles, broken into 1-2″ pieces
- 1 12oz. pkg. broccoli coleslaw mix
- 1 onion, diced
- 1T. olive oil
- 1/3c. raw or dry roasted sunflower seeds, unsalted
- 2-3T. sesame seeds
- 1/2c. olive oil
- 2T. smooth peanut butter
- 2T. balsamic vinegar
- 1/2t. salt
Saute the diced onion in the 1T. of olive oil over medium high heat. When it’s starting to soften (about 4-5 minute), add the package of broccoli mix. Stir together and cover. Continue sauteing over medium heat for 8-10 minutes, stirring occasionally. Meanwhile, bring salted water to boil and cook soba noodles according to directions.
Whisk together the 1/2c. olive oil, peanut butter, vinegar, and salt. (I soften my peanut butter in the microwave for 20 seconds so it whisks easier.)
Toss together the drained noodles and broccoli mix. Pour the dressing over and toss to combine. Add seeds and toss again. Serves 4.
Super easy and super delicious. I think in the future I’d like to try two packages of broccoli mix so it’s more veggies to noodles, but this is excellent as is. And if you like things extra saucy, like Dave, you might want to double the dressing portion and keep some aside for those folks.

Yea, you made the salad! The changes you made sound fabulous. I added steamed broccoli to my version to increase the veggie content.
