1-2-3 fudge (adapted from here)
- 1/2c. coconut oil, melted
- 1/2c. unsweetened cocoa powder
- 1/2c. smooth pb
- 2T. honey
- 1t. vanilla
- pinch of salt
1. Combine all ingredients in a blender. I measured the cocoa powder but eyeballed the rest. Blend until mixed. 2. Pour into a glass pie plate. 3. Freeze until firm. Keep refrigerated.
Step 4 would be to enjoy it after your toddler goes to bed. Keep it classy by using plastic children’s bowls. And kick it with a side of soy milk, if you like.
On first bite I thought, “this isn’t quite sweet enough.” And then on the second bite I decided it was perfect. We both enjoyed seconds before we stopped ourselves. Next time I want to try sprinkling it with sea salt before freezing it. Yes and yes.
