The other day Kimberly put on twitter that she was making split pea soup in the crockpot, which got me thinking about pea soup, too. I immediately asked her what recipe she was using, but then got antsy and just googled a few of my own. I ended up throwing together some ingredients and it came out perfect. Flavorful, thick, and super easy to prepare.
Split Pea Quinoa Crockpot Soup
- 2c. dried split peas
- 1/2c. quinoa
- 1 onion, diced
- 2T. minced garlic
- 1t. salt
- 1t. cumin
- 1T. italian seasonings
- 2T. olive oil
- dash cayenne
- 8c. water
Combine all ingredients together in crockpot and cook on high for 6-8 hours, or until peas are all soft.
