Rice Cooker Risotto
- 1 1/2c. arborio rice
- 4 1/2c. vegetable broth
- 1T. italian seasonings
- 5 cloves garlic, minced
Combine all ingredients in the rice cooker and set to cook (my rice cooker only has one setting). Serves 2-4.
We served our risotto with roasted broccoli and a little nutritional yeast:
Waaaaay easier to make risotto this way than to stand at the stove stirring! It would be delicious with some fresh parmesan shaved on top, too.

I’ve never attempted risotto and I don’t own a rice cooker, but we had one of those packets of cheesy broccoli rice and grilled chicken last night. I also steamed up some cauliflower but it tasted funny so I dumped it.

Steven steamed fresh green beans, made roasted cauliflower, and a yummy chickpea, red pepper bulgar salad last night!

Yum, looks great. I went easy last night, tomato soup and grilled cheese with awesome wheat bread.
