Last night I made my best batch of workout cookies yet! I changed up the recipe a little bit to this:
- 1/4 c. whole wheat flour
- 1 c. oats
- 1/2 c. rice krispies
- 2 T. (or so) chia seeds
- 1/4 c. ground flax
- 1/4 c. (scant) brown sugar
- 1/2 c. plain yogurt
- 1/4 c. applesauce
- cinnamon
- 1/4 c. choc. chips
By the way, I don’t put these in a muffin tin – I just spread them in a square pan. These came out great – a little fluffier and a little thicker. Dave and I both noticed a difference! We’ll have to see if I can repeat it again.
Then I decided to try Fruit, Seed, and Nut Power bars… with a big FAIL. I used almonds, dates, peanuts, raisins, sunflower seeds. I didn’t have any orange juice, but we had this in the fridge:

The taste was fine… nothing fantastic, nothing gross. But they fell apart as soon as I started cutting them, despite being chilled. That was majorly disappointing! I’m not sure what went wrong? I guess we’ll just crumble it and eat it over yogurt?

drunken beans!pintos cooked with beer (hence drunken), onion, garlic, fire-roasted tomatoes, cumin, chipotle.i like it served over coriander rice with a topping of tomatillo cilantro chutney.

mostly win. tonight i made breakfast for supper. yummy! oatmeal, apple, yogurt (and walnuts for me) pancakes. by the time i got to the third one, i finally had the cooking and flipping technique down.
with so much stuff in them, it was quite difficult!
